Critical violations: Salads containing chicken not kept at 45 degrees or below in reach-in cooler in back of kitchen. Temperature of salads at 53 to 55 degrees. The temperature dial on the outside of the cooler was 50 degrees. Management states the salads were prepped in the morning, at approximately 10:30 a.m. (corrected – 12 salads voluntarily discarded and cooler was then taken out of service.
In lower portion of salad preparation cooler, 2 bins of cooked shredded chicken were improperly cooling. One bin was temped at 49 degrees in the center of bin, and 45 degrees on the sides of the bin and the second bin was temped at 53 degrees in the center and 49 degrees on the sides of the bin. Both bins were covered and product level was more than 4 inches deep. Management states the shredded chicken was prepared at 10:27 a.m., cooled on sheet trays in a reach in cooler, to an undetermined temperature, and then moved to the bins to finish cooling (corrected – shredded chicken moved onto sheet trays and rapidly cooled to 40 degrees before repacking into bins).

Violations: Interior of microwave oven not clean with food soil. Exterior of refrigerator door handle area not clean. Wire racks in kitchen not clean with greasy soil.
Three-bay sink plugged and full of water, also has water accumulated around the grease trap lid.
Mens’ and ladies’ toilet rooms lack hand wash signs (corrected – provided).
Floor areas in the kitchen not clean; primarily under equipment and along baseboard areas.
Vent hood, hood filters, and fire suppression lines not clean with accumulated grease.
Establishment operating without a current food service permit.
Comments: Person working on toilet room doors for the owner stated that the grease trap is plugged and that’s why the three-bay sink was not draining. Any work on the plumbing involving the grease trap needs to be done by an Onondaga County licensed plumber (list of county licensed plumbers provided).
The kitchen can not be used until repairs are made. Water was run at the bar and toilets were flushed and no sewer backup occurred. If a sewer backup occurs the establishment must close and contact the health department immediately.
